Hey all! Thanks for checking in here! This recipe was requested after I shared on instagram my chia seed pudding recipe (check it out in my highlights @faith.in.food). I love chia seeds, I think they're beautiful and highly nutritious, fun to play with and such an interesting food. They're full of antioxidants, omega-3s, fiber, calcium and protein! They can absorb up to 10x their weight which make them a great additive for baking, smoothies or anything with jam-like or pudding-like consistency.

Ingredients:

  • 2c strawberries (quartered)
  • 1/2c water
  • 1Tbsp honey
  • 3Tbsp fresh lemon juice
  • 1tsp lemon zest
  • 1/4c chia seeds

Directions:

Cut up strawberries (or your favorite berry), add to a pot along with water, and honey. Heat thoroughly. After it's been bubbling and thickens up a bit (5-7 min) use an immersion blender (my favorite kitchen tool) to blend to your desired consistency. I like mine pretty smooth but you can leave chunks if you want to! (you can also put in a blender). Mix in lemon juice and zest.

Stir in chia seeds and keep on the heat for 5 min longer. Take off the heat. Let Jam cool and thicken up 20-30 minutes then transfer to a glass jar and let cool completely before putting in the fridge. Best if left overnight to fully set but if you can't wait I don't blame you.

This will stay good for 1-2 weeks in the fridge! I use it on pancakes, waffles, toast, yogurt or mixed into my chia seed pudding!
